The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
We have a TON of green tomatoes at our house.
I don’t know if it was the combination of too much heat or not planting early enough – but we have bushels of green tomatoes and four red ones.
And since I hate to let any of our hard-earned produce go to waste – we make Green Tomato Salsa Verde.
Green Tomato Salsa Verde
Ingredients
10 small green tomatoes, peeled (or combination tomatillos and green tomatoes)
8 serrano chile peppers (or Hatch Green Chilis)
1 onion sliced
1 tablespoon garlic, chopped
1.5 teaspoons salt
1 lime, juiced
1/c cup cilantro, fresh chopped
Directions
1. Place green tomatoes, peppers, onion and garlic in a saucepan and add water to cover.
2. Sprinkle salt over the top and bring to a boil. Reduce heat and cover. Cook for 20-30 minutes or until tomatoes are soft and not as vivid green. Add more water if necessary.
3. Pour mixture into a blender and blend till smooth.
4. Can or freeze sauce according to specifications.

We have the green tomato bounty as well. I’ve never used the green ones in the past. Do you use it as a salsa or are there other ways to use this recipe?
