Swim suit season is upon us…
(I know you won’t believe it looking out the window, but it will be here before we know it.)
I love the pool. I love summer. And I love being able to watch my kiddos swim while I read my InStyle from the lounge chair.
What I worry about is the “winter pooch” that I have developed over these last few months and how am I going to get rid of it.
So I’ve been investigating ways to cut calories without feeling like I’m sacrificing.
Because when we feel like we are sacrificing all.of.the.time we tend to binge and cheat more often.
That’s why I love that the International Delight Light Iced Coffee only has 100 calories per serving. So when I mix in a little more coffee, I still get a great iced coffee beverage for about 1/4 the calories of a comparable coffee shop beverage.
Even better, I stumbled upon this recipe for a Caramel Macchiato Parfait from International Delight’s Facebook Page. (The best part, it is under 100 calories per serving.)
Caramel Macciato Parfait
1/4 cup sugar
1/4 cup cornstarch
Pinch of salt
1.5 cups of International Delight Caramel Macchiato Iced Coffee
1.5 cups of skim milk
1 teaspoon vanilla
Sugar-Free Cool Whip for garnish, optional
Directions
1. In saucepan, whisk together first three ingredients. Then whisk in Iced Coffee, milk and vanilla.
2. Bring to a boil over medium heat, stirring frequently.
3. Reduce heat to low, and continue stirring for an additional five minutes while pudding thickens.
4. Remove from heat and pour equally into six parfait or glass cups/bowls.
5. Place in fridge to set. Garnish with sugar-free Cool Whip.

My healthy treat is frozen mixed berries from Aldi. They are in the freezer section, and they are a blend of rasberries, blueberries and blackberries. They also sell just straight (non-mixed) frozen rasberries, blueberries, strawberries and peaches. They are about $2.25. I eat them when I can get them. That Dr. Oz show says that berries are good for you, so I eat these instead of ice cream. I like the mix of the different berries. They also stain your teeth if you haven’t brushed. The blueberries like to stick on the scum of your teeth. I try to avoid ice cream because it goes straight to my bigger parts.
I like a bowl of strawberries.

I’m a berry and cherry girl…. When in season, I love to eat blackberries and raspberries. And I await the time in summer when cherries price goes down to a reasonable price. I can eat cherries by the bowlful!

My new favorite treat is to cut up an apple, squeeze some lemon juice on it, and put it in the fridge for a few hours. Some how it tastes like a pear when you eat it!
