Holy Cow, Peeps….School Starts Next Week!!!
(Where did the summer go?)
Besides getting ready for the new school year with shopping (back to school supplies, new tennis shoes, socks and underwear), we are also restocking our fridge and pantry for school lunch items and after school snacks.
I don’t know if your kiddos are like mine, but they are HUMAN GARBAGE DISPOSALS when they get home from school. And if not carefully monitored (like a wild animal at the zoo) they will burn through a whole bag of potato chips or box of crackers and not be hungry for dinner.
I do my best to keep healthy snacks around the house, but let’s be honest, between juggling a part time job, kid’s activities, managing the house and making meals…sometimes snacks get forgotten, until I’m watching them wolf down a half-quart of ice cream.

Fav healthy snack recipe are those simple enough to not need a recipe! Like veggies/dip, fresh fruit, string cheese, almonds, Greek yogurt, baked chips (or veggies, homemade, carrots, kale), smart pop or air-popped popcorn.

2 cups quick oats
2 scoops protein powder
1/2 cup dried cranberries
1/2 cup peanut butter

In addition to kale chips, I would have to add roasted broccoli as a favorite snack/lunch food. Cut up broccoli florets in small pieces, blend with a couple T olive oil , a teaspoon of sugar as salt and pepper to taste, and bake at 400 for 15 minutes or until crispy. Such a fun twist on veggies !
