Thanksgiving is the season of the BIRD.
More specifically, the turkey.
And if you are like me, you usually either purchase too big of a turkey for Thanksgiving OR you purchase a second turkey after the holidays at the super discounted rate and throw it in the freezer for a meal down the road. (Or both, let’s be honest.)
But sometimes too much turkey…too many days in a row…can lead to turkey burn-out.
That’s why I came up with this super easy “leftover” or “from your freezer” Crustless Turkey Cranberry Panini Recipe.
It’s crustless because you use leftover stuffing as the “bread” in your Panini Maker (we LOVE our Cusinart 5-in-1…one of the best purchases, ever.)
Plain ‘ole turkey sandwiches are so 1970s…why not meld the flavors all together for a completely different taste and presentation? I promise, this meal is super kid-friendly because of its uniqueness.
Honeysuckle White Premium Whole Turkeys are raised without growth-promoting antibiotics. Even better, they aren’t a premium priced bird, which makes it easier to either buy a bigger bird at the holidays or grab a second bird after the holidays. Plus, you can whip these up in the days after Thanksgiving or put all of your Thanksgiving goodies in the freezer for a quick weeknight meal.
So, say YEAH for the Turkey BIRD and grab a second Honeysuckle White Turkey (or Shady Brook Farms, their sister brand, for my East Coast peeps).
Crustless Turkey Cranberry Panini Recipe
Plain ‘ole leftover turkey sandwiches are so 1970s…why not meld the flavors all together for a completely different taste? This Crustless Turkey Cranberry Panini Recipe will become a family-favorite because of it’s unique presentation.
Recipe Yields: Four Sandwiches
Ingredients
2.5 – 3 cups of stuffing
1 egg
4 slice Monterey Jack cheese
12 oz of turkey, sliced 1/4″ thick
4 – 8 tablespoons cranberry sauce (this is completely up to you, some people like relish, some jelly, some sauce)
Secondary Ingredients
Directions
1. Preheat griddle.
2. Mix egg with stuffing in a medium size bowl. Mix well.
You want your stuffing on the “wetter” end. So if needed, add water, a tablespoon at a time, until you get the desired consistency. Almost, like a really thick batter. Set aside.
3. Spray inside of panini maker with cooking spray. (Make sure to spray top and bottom griddles.)
4. Place 1/4 cup of stuffing batter on the right side of griddle. Repeat on left side. Close griddle and let sit for approximately 2 minutes.
You want the stuffing to “set” but not cook all the way.
5. Lift handle on griddle and add cheese, turkey, and cranberry sauce to ONE stuffing section. With a spatula, gently lift the other stuffing section on top of the turkey/cheese layer. Close griddle. Cook for approximately five minutes or until per your small appliances recommendation.
6. Repeat for other four sandwiches and enjoy.
