Our family has been trying to incorporate more vegetarian meals into our rotation.
And if you are like me, you realize that doing this can be hard. In my family, I have a lactose-intolerant husband and two kids under the age of 10 who are vocally-picky eaters.
And my other issue – finding all the ingredients at one grocery store. While I am an adventurous cook, the thought of having to make a special trip to the Asian Market for mushrooms usually means a recipe will not be on the meal planning list for the week.
So, I was so thrilled when I opened Mary McCartney’s cookbook “Food: Vegetarian Home Cooking“. It is a vegetarian cookbook that is true to home cooking (aka using things from your pantry and freezer).
Mary takes her vegetarian cue and home cooking spin from her mom Linda (yes, this is a semi-celebrity cookbook, since Paul is her dad). But it is Mary’s ability to create recipes that use ingredients from your pantry, your freezer, and a quick trip to the produce aisle that make this cookbook different.
In fact, her quote at the beginning of the cookbook resonated with me so much, “I like uncomplicated cooking, so usually it needs to be kept quite simple and not too time-consuming.”
The pictures are gorgeous. The ingredients simple. The directions clear. And the food basic and satisfying.
