The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
I love me some Kentucky Fried Chicken. The deep fried, the potatoes, the cole slaw, the biscuits.
However, ever since I went the official Kentucky Fried Chicken website and checked out nutritional information, I haven’t been back to a restaurant.
Don’t get me wrong, I’m all about a guilty pleasure. (I watch Desperate Housewives of {ENTER CITY NAME}.)
I’m just not going to jeopardize the 50 minutes on the treadmill for the sake of a secret-recipe piece of chicken.
But the craving still rears it’s ugly head every now and again – and this is my most healthy alternative to keep the beast at bay.
Crispy Chicken Fingers
Ingredients
3/4 lb of skinless, boneless chicken breast (cut into strips) – Part of this week’s Price Chopper Deals or Hen House Deals
1 egg slightly beaten
1 tablespoon honey
1 teaspoon spicy, dijon or regular mustard
2 cups of cornflakes, finely crushed (with some bigger pieces for extra crunch)
Dash of black pepper
Directions
1. Preheat oven to 450 degrees. Coat a wire baking rack with cooking spray.
2. In a shallow dish, combine egg, honey, mustard.
3. In another shallow dish, combine cornflakes and pepper.
4. Dip chicken strips into egg mixture and then roll in cornflake mixture to coat.
5. Arrange chicken strips on a wire baking rack. Place wire rack on an ungreased cookie sheet and then place in oven.
6. Bake for 8 minutes and then flip. Bake for 4 – 6 minutes more or until golden brown and chicken is no longer pink.
Note: 3/4 lb of chicken doesn’t go very far. Double to recipe for more “hungry eaters”. Also this chicken DOES NOT make good leftovers. Eat it hot and eat it now – with a side of mashed potatoes and gravy and some biscuits.

I make a similar crispy chicken. I like to save up the chips and cracker crumbs from the bottom of the bags (the ones that are too small to put in kids lunches). I use this along with bread crumbs or cornflakes to coat the chicken. The kids love it every time.
