New Years. A time to reflect. A time to dream. A time to eat Rice Krispies.
I hated New Year’s Eve as a single adult.
There was always so much PRESSURE to find a cool party, with a cool guy, and have it be the “best time ever”.
But as married mama to kiddos, I really enjoy New Year’s Eve.
There is something magical about hanging out as a family, drinking sparkling cider, staying way to late, and enjoying the feeling that comes from knowing the Holiday craziness is over, another year is on the horizon, and being blessed to be part of crazy/fun/loving family.
So this time Team Kansas City’s Rice Krispies® Treats Making Memory Challenge is in the New Year’s Tradition of the British Poppers – called Snap. Crackle. Poppers. Rice Krispies® Treats that will delight every child who decorates it or “pops” it open.
Snap. Crackle. Poppers Rice Krispies® Treats
- 3 Tbsp. Unsalted Butter + extra butter for “greasing”
- 4oz. marshmallows (1/2 bag) – make sure bag is left open overnight
- 2 c. Traditional Rice Krispies®
- Candy of choice to fill
- Decorating Supplies (frosting, glitter, stickers – pretty much anything you want to use to make it unique.)
Melt 3Tbsp. Butter in a heavy saucepan over med-high heat.
Add marshmallows, stirring constantly until melted and mixture is smooth.
Add RiceKrispies® to hot mixture in saucepan (this keeps them warm, and thus easier to manipulate, longer)
Mix thoroughly.
Butter plastic cutting board.
Place half of marshmallow mixture on cutting board and make into a small loaf. (Around 5″ by 3″.) Try to compact the mixture as much as possible.
Once you have a compact loaf, take a small fondant rolling pin (or other small rolling pin) and roll out the mixture to a 1/4 inch thickness – trying to keep the shape of a rectangle. (You will need to work quickly. The cooler the mixture gets, the more difficult it is to shape.)
Take rolling pin and “roll” mixture into a cylinder with a 1 1/2″ circumference.
Remove rolling pin and pinch one end to desired look. If going for a tapered end, start about 1 inch in, pinch and crimp the end.
Tilt and fill with candy of choice.
Pinch other end.
Set aside and let harden for 24 hours.
Repeat with other half of RiceKrispies® mixture.
Decorate once hard with fondant, icing, stickers, glitter, etc. It’s all about being fun!
Note: You can make these ahead of time and freeze. Another idea is to put a small fortune, saying, or inspirational quote inside the crackers.
Place these Snap. Crackle. Poppers on each child’s plate on New Years and let them “crack” them open and see their New Year’s Surprises.

I do tend to make New Year’s Resolutions every year, though in the past 5 years I have become much more practical. I usually save my “resolution” giving up of something for Lent :). The shorter time frame helps me succeed, and motivates me to try to continue on with my plans, but less pressure!

Last year my husband and I sat down and made resolutions for our family. Mostly fun things like, take a date once a month, or take a vacation with the family. Anyway, we are so glad we did that and we will do it again for 2012!
i usually dont make resolutions, i just spend the evening with the people who mean the most to me. this year is going to be very difficult. my husband walked out on us on oct 1, the holidays have been hard. thanks for the opportunity.

Resolutions for me are doing things that effect our daily lives. Always being a positive role model for my kids, them seeing the positive choices we make in turn they hopefully are learning to make the same kind of choices. Living life to above and beyond our fullest and being happy about our own paths and who we are & will become.
