Summer is a crazy time for our family.
Both of my kids are in swimming and diving. Which means Hubs and I spend a fair amount of time in the evenings watching their swimming/diving meets.
And these meets usually occur around dinner time. We try to be healthy and frugal (because eating out two times a week can kill our budget and our waistline) and do the “cooler” thing, but sometimes the thought of having another sandwich is enough to send us running toward Chic-fil-a and a creamy milkshake.
Meet our savior…this Avocado Hummus Turkey Wrap Recipe.
I love this wrap for several reasons, but mostly because it requires little refrigeration (because hummus can be held at room temperature way longer than normal condiments). And it has avocado, which provides a great source of fat and keeps me filled up and away from the snack bar mid-way through the meet. Plus, this wrap is SUPER easy to make, while still looking and tasting like a grown up meal.
(Just be careful on the type of wrap you pick…something those little things are SUPER calorie dense and you’d almost be better off eating a Snickers and Ice Cream from the snack bar.)
Avocado Hummus Turkey Wrap Recipe
Looking for a summer sandwich alternative? This 6-Ingredient Avocado Hummus Turkey Wrap Recipe is a protein packed power house that is super easy to make and will keep full all day long.
Recipe Yields: 4 Servings
Ingredients
Spinach and Herb Wraps
Homemade Hummus (or you can use your favorite store brand too)
1 lb Thin Sliced Turkey Breast (I love Boar’s Head Original Smoked Turkey)
1 Head Bib Lettuce
2 Roma Tomatoes, thinly sliced, and divided in to four servings
2 avocados, sliced and divided in to four servings
Directions
1. Spread two tablespoons of hummus on spinach and herb wrap.
2. Place 1/4 lb of turkey, one serving of avocado and one serving of roma tomatoes on top.
3. Lay the lettuce on top of everything.
4. Roll up.
5. Repeat until all ingredients are gone.
5. Cut in half and enjoy!
