I’m not sure what happened.
I blame my children.
I went from the wife and mother who used to love to create an award-winning meal to a wife and mother who has exactly 27 minutes to prepare a meal that no one will complain about before we go to our next activity.
Cooking and meal preparation has changed in our house.
I have less time. More vocal eaters. And a desire to still create something that is healthy from scratch.
For some reason, Mexican is always a hit in our house. Maybe it is the smothering of sour cream and salsa or maybe it is the addition of tortilla chips….all I know is that when I’m crunched for time this is my healthy chicken burrito recipe.
20 Minute Healthy Chicken Burrito Recipe
Recipe Yields: 3 Full Size Burritos
Primary Ingredients
3 large flour tortillas
1 lb boneless skinless chicken breast, chopped into bite size pieces
3/4 cups black beans, drained and rinsed (a little less than a whole can)
1/2 medium yellow onion, chopped
1 teaspoon chili powder
1 teaspoon cumin
cooking spray
6 tablespoons Mexican cheese blend, shredded
3 tablespoons salsa, plus more for garnish
3 tablespoons sour cream, plus more for garnish
Instructions
2. Laying on flour tortilla flat, place 2 tablespoons cheese in center, then add 1/3 of the chicken mixture on top, then add 1 tablespoon of salsa, and 1 tablespoon sour cream. Roll tortilla in a jelly roll fashion, squeezing sides to ensure filling doesn’t fall out. Place seam side down on counter, and repeat with next 2 tortillas.
3. Heat a grill pan or clean skillet over medium/high heat and spray with cooking spray. Set tortillas into pan, seam side down. Cook for 3-4 minutes, until golden brown on bottom side, flip and continue cooking on that side until browned. Remove from skillet and place on a wire rack or plates to serve.
4. Serve with a side of sour cream, guacamole, salsa, hot sauce, or whatever toppings your family prefers

This was a hit for my husband and me! I had a recent health issue where I was sent to the ER with idiopathic pancreatitis. They are still looking into possible causes, possibly food allergies or sensitivities. Until we have a more definitive answer, I am in a very low fat diet. I used fat free sour cream, reduced fat Mexican cheese, added fire roasted tomatoes from the can and made sure to buy flour tortillas. It was so yummy, I shared with my family!

For those looking for a calorie count, my boyfriend and I did the math with all the ingredients and divided that result by 3 to get the calories for 1 serving and it came to about 510 calories each. So pretty healthy, and very filling and delicious!!

Thanks for this recipe! This looks really good. I think for the final step I will use my Foreman grill instead of a grill pan or skillet. Cooking both sides at once will save another minute or two. 🙂

I make something similar but use rotisserie chicken, cheese, green onion and avocado. Agreed that kiddos love them. Serve with a fruit salad and dinner is done in 15 minutes flat. I also put all of mine on my family size foreman grill and spray with a little “Pam”. I can make 8 at a time. Great for sleepovers too!

The recipe looks great, but I would never, ever advise anyone to use cooking spray on their cast iron! Everything I’ve read says it will ruin the cast iron! I cook in my husband ‘s grandmother’s cast iron pans, so I am super-protective of them.

Good recipe! I would recommend to swap the sour cream with plain greek yogurt to make it even healthier! Tastes just like sour cream but has more protein and zero fat.

For the life of me, we can’t find our cast iron skillet! Does this HAVE to be cooked in a cast iron skillet?? It seems like such a simple and easy recipe, I’d love to get it a try. Thank you for sharing! 🙂

I saw this recipe and thought it looked yummy. I did change it a bit to make it more of my taste but the recipe how it is, would be delicious as well! I used different spices. I used garlic, garlic powder, salt, black pepper, cayenne, paprika and cumin. I love sour cream but I skipped out on that. I love cheese but I added about half a teaspoon (not the Mexican cheese blend, Colby jack instead). Instead of salsa I made a pico de gallo. Just thought I’d share how I did mine in case anyone wants a somewhat spicy version.
