The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
If you follow Kansas City Mamas on Twitter or Facebook, you probably read that on Tuesday night I tripped and a whole glass of water went over/into/on-top-of my beloved laptop.
And then I freaked out and did the OPPOSITE of what you are suppose to do – which is to shut everything down immediately, put it on it’s side and put it in front of a fan.
Instead, I tried numerous times to make my beloved laptop come on again. Each time with more screaching and flickering. And at 11:30 pm it existed to turn on.
Since I was in shock at this moment, I did a quick prayer asking for God to handle it and somehow fell asleep.
Enter 1:30 am.
When I awoke and the shock/comfort in God taking care of it turned into PANIC.
PANIC because a blogger’s life is tied up in her laptop and there were things that were saved on its hard drive that were no where else.
So starting at 1:30 am, I tried to salvage all of my records from my laptop by trying to find them in other places where I had emailed them, posted them, etc. And then since I was all hopped-up-on-stress-panic and the adereline – I just decided to stay up all night long.
So after a night/morning/day like that, I needed some love from the oven. I needed comfort food.
Stick to your bones. Like a Grandma’s hug. Nothing fancy. Probably has Cream of Something Soup in it comfort food.
So I made a big 9×13 pan of Tater Tot Casserole – ‘cause I didn’t care if no one else ate it – I just knew I would feel better after I was done.
And I did.
And somehow God smiled on me and my computer came back to life.
Sometimes the world just needs more comfort food.
Tater Tot Casserole
2 lbs of ground beef
2 cans of cream of chicken soup
1 package of dried onion soup mix
1 cup milk
1 package of tater tots
Directions
- Preheat oven to 350 degrees.
- Brown hamburger and drain.
- Place cooked hamburger in bottom of 9×13 glass pan.
- In separate bowl, mix dried onion soup mix, cream of chicken soup and milk together. Pour over ground beef.
- Place tater tots side-by-side on top of ground beef/soup mixture. Cover the entire casserole.
- Bake for 1 hour and 15 minutes or until tater tots get brown.

Bless your heart!! We love our computers and bloggers and blog masters must have that little baby in top form and running shoes on it! lol (and a little melted cheese on top of that ‘tater comfort ‘medicine’ wouldn’t hurt a thing either! 🙂 Seriously, thank You Lord for taking care of your laptop!

your recipe sounds good i have made another version where you don’t cook the hamburger and pat it down onto bottom of pan covering with cream of mushroom soup and optional cut up some velveeta cheese layered on then cover with the tater tots and bake for an hour. Yes a definite comfort food!!

That casserole is a favorite at our house. We like to use Shredded Frozen Potatoes and cream of celery soup to change it up a bit. God is Good!
