The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
It finally feels like Spring. I’ve started to see the tulips push their little green heads out from the cold hard ground.
And with Spring comes the realization that Summer (and swim suit weather) will be here soon.
That realization always “encourages” me to start eating better.
So I’m sharing my favorite Strawberry Spinach Salad.
Strawberry Spinach Salad
Salad Ingredients
8 cups of spinach, washed and dried (you can also throw in some romaine too)
1 cup strawberries, sliced (Strawberries are $.99 as part of Price Chopper’s Weekly Deals)
4 oz. feta cheese (blue cheese is also very tasty)
1 medium red onion
4-6 slices of cooked bacon, crumbled
1/2 cup slivered almonds, toasted
Dressing Ingredients
1/2 cup vegetable or olive oil
1/4 cup sugar or splenda
1/4 cup red wine vinegar
1 clove garlic
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
Directions
1. Mix salad ingredients in a large bowl.
2. Mix dressing ingredients in a container with tight fitting lid and shake.
3. Cover salad with dressing to desired “coveredness”.

This sounds great. I’ll have to try it. That reminds me, last week when you posted the cabbage recipes, you were discussing Runza in Lawrence. I noticed today that they are putting one in on Johnson Drive in Mission! Made me think of you! 🙂
