The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
Not all sirloin is made the same. (I know you are shocked that I said this…)
There are three grades of beef – Prime (Best), Choice (Second), and Select (Third).
The grade of meat you buy will also impact the flavor, tenderness, and which cooking technique you use.
The lower the grade…the more marinade (and longer it needs to sit) to produce a piece of meat worth grilling (in my opinion).
But the good news is that sometimes a lower grade of beef can produce outstanding results in an un-orthodox cooking method.
Most people would {cringe} when I say to use sirloin in the following recipe (on the stove, with rice) – but this recipe is PERFECT for a lower grade sirloin (aka cheaper).
Southwestern Beef Tips
Ingredients
1.5 lbs of beef sirloin steak, sliced into thin strips (TIP: Cut meat when it is partially frozen for ease.)
1 onion, sliced or chopped
1 red pepper, sliced into thin strips
2 tablespoons taco seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
2.5 cups of cooked black bean or one can, rinsed and drained (see How to Cook Dried Beans)
1/5 cups frozen corn
1/2 cup salsa
2 teaspoons fresh cilantro, chopped
White or Brwon Rice
Directions
1. In large skillet, add oil and heat on medium-high heat until hot.
2. Add first six ingredients and stir-fry until meat is no longer pink and veggies are tender.
3. Stir in beans, corn, salsa, and cilantro and heat through.
4. Serve over brown or white rice with hot sauce.
