The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
With the return of cooler temperatures is the return of slow-cooked oven meals.
(Because no one wants to run their oven for three hours when it is 90 degrees outside.)
This one is a family favorite (aka Know Thy Family will eat the whole thing). It is an easy-to-make-put-it-in-the-oven-and-forget-it kind of meal. Serve with brown or white rice and some fruit and you’ll have a hit.
Easy and Elegant Chicken
Ingredients
6 Boneless, Skinless Chicken Breasts, thawed – part of the Hen House Weekly Deals this Sat/Sun for $1.66 lb
6 strips of bacon
4 oz. Dried Beef (Don’t skimp – buy Hormel Dried Beef)
1 can Cream of Mushroom Soup
1 cup Sour Cream – full fat or it will separate
1/2 cup cooking sherry
1/2 cup almond slivers
Directions
1. Put a slice of dried beef on both sides of the chicken breast and wrap a slice a bacon around it.
2. Place the chicken (bacon ends down) in a 9×13 glass pan. Continue steps 1 and 2 till all chicken is in pan.
3. Mix soup, sour cream and sherry in a bowl and pour over chicken. Try to cover each piece with sauce.
4. Sprinkle almonds on top.
5. Cover with foil and back for 3 hours at 275 degrees.

This sounds so good. I’m wondering if it would work in the crockpot? I’m going to make some adaptations for our allergies and try this out. 🙂

adaptations I made
Used homemade gluten free cream of mushroom soup and added GF beef bouillon.
Added a can of mushrooms
Used uncured bacon from whole foods
Cooked in crock pot on high for 6hrs.
Can’t wait to see how it turns out.
