We went out to dinner last night and I ordered Taco Salad. I knew it was healthy as long as I didn’t eat the shell. Ohhhhhhh, but the shell is soooooooo good. I managed to avoid the temptation (kind of) and only ate a small amount of the shell. Anyway, it got me to thinking about finding a light taco salad recipe. Light Taco Salad
Ingredients
1 Head Iceburg Lettuce-Chopped
1 Large Tomato-Chopped
2 cups of Kraft Fat Free Cheddar Cheese
1 lb of Extra Lean Ground Beef or Turkey
Low Sodium Taco Seasoning Packet
Small Can of Black Olives-drained
6 0z Baked Doritos-crushed
1/2 C. Fat Free Ranch Dressing
1/2 C. Fat Free Miracle Whip

Can you really stand to eat FF cheddar cheese, Ranch dressing and FF Miracle Whip? The light versions of these products are good enough, but the ingredient list on the FF is kind of scary. Not trying to discourage you from posting a light meal–just really asking for feedback to see if these products have improved since the last time I tried them.
