The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.
I moved to Rapid City, South Dakota, after college for my first job. (At a Black Hills Gold Company – remember that from Junior High?)
Anyway….there was a restaurant in Hill City, South Dakota, that served only three things – Lettuce Wedge Salad, Prime Rib, and Pie-Of-The-Day.
It was AMAZING…and I still dream about their Lettuce Wedge Salad.
So here is my ode to Lettuce Wedge Salad and living in South Dakota.
Lettuce Wedge Salad
1 Head of Iceberg Lettuce
6-8 strips of bacon, cooked and crumbles
Dressing:
12 oz Blue Cheese, crumbled
6 oz. Sour Cream
1/2 cup buttermilk (or 1/2 cup milk with 1/2 teaspoon of vinegar)
1/2 tsp. kosher salt
1/2 tsp. black pepper
1 pinch of cayenne pepper
1/2 tsp. Worcestershire Sauce
1 tablespoon lemon juice
1 dash of hot sauce
Directions
1. Combine dressing ingredients and chill for at least two hours.
2. Rinse and dry lettuce. Core and cut into four equal wedges.
3. Pour dressing liberally on lettuce wedges and crumble with bacon.
