The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients (not including pantry items), and coming in at under $10 per meal.

And with it comes basketball frenzy, Lent, Spring Break, and St. Patty’s Day.
And the last one brings cheap cabbage.
Now, I get that cooking with cabbage can be a little intimidating. But considering it is one of the “super foods” and this week it is as low as $.19 per pound, it might be time to find a recipe or two that you can enjoy making.
Here are a few of my favorites:
Runzas
What a weird name, right?
Here is some trivia – it means “meat sandwich” and is so popular that it has its own chain of restaurants in Nebraska. You might have also heard it called “beer rocks”. (Which is also another weird name and makes me think of how I might feel after a Friday night in college.)
Either way, it is a spicy meat and cabbage sandwich surrounded by a sweet bread. Add a little spicy mustard and some french fries and I’m in heaven.
Even better – make a batch and “half-bake” half the batch. Then stick them in the freezer for a future meal. All you have to do is thaw and bake for full time and you are ready to eat.
Sweet Russian Cabbage Soup
Another favorite in our household for the sweet and sour taste. It’s benefits besides being a low cost meal is that it is super low in calories and high in protein and fiber. (But I always serve it with fresh bread – so that low in calorie thing gets negated.)
Warning: It will make a HUGE pot of soup (like for you, your friends, and your teenage kids’ friends). Either make it for a party or make and freeze a couple of batches for later.
Asian Slaw
I’ll admit – I love Asian Slaw. It must be those crunchy ramen noodles. But this recipe is great with Napa or regular cabbage. Serve with a little grilled chicken and I guarantee there won’t be a bit of slaw left to eat (or maybe that is just in my house).

I love bierocks, to make a simpler recipe I use frozen bread dough.
Question – do you think the soup makes at least 8 servings? The recipe says 4, which makes it not too healthy but if I could cut everything in half and still get a good serving its worth making. Looks really good.

When I make this recipe it fill my stock pot UP. I think at least eight servings and healthy servings at that.

Kelly, did you know there is a Runza in Lawrence? Now you can justify that Dillons trip! hehe! I make them at home, but my bread to filling ratio is never as good as the restaurant! Yum!
