I dislike peanut brittle.

Therefore, peanut brittle doesn’t get made at our house very often.

(It isn’t that I don’t love him, I just love sweets more.)

In all seriousness, peanut brittle has always baffled me. There is a candy thermometer involved and a super fine line between amazing and bad.

What I love about this Microwave Peanut Brittle Recipe is it’s quick, easy and there is no stovetop (or candy thermometer) involved.

(Yes, I said microwave. Just like a college student in the dorm.)

One item of note, you need to understand your microwave and it’s power. It’s better to undercook on the front end, then overcook on the back end. Remember, you can always cook for longer.

And now I’m off to show my husband how much I love him and whip up a batch. But don’t tell him I use the microwave, he still thinks I slave over a stove.
