My house “hosts” Christmas and Easter Dinners.
And I’m a weirdo, because I love it.
I love the planning of the menu, the buying of the groceries, the cooking of the meal.
The only thing I don’t like…not enough oven space. If you are preparing the meat and want to do a casserole, it’s down right impossible.
So about three years ago, I got crafty and started using my slow-cooker as a secondary “oven” for things like potatoes, rolls, green bean casserole and sweet potato casserole.
I love this Slow Cooker Apple Pecan Sweet Potato Casserole Recipe because it is BEYOND easy (throw some stuff in the crockpot and walk away till you are ready to eat) and creates virtually the same result as it’s oven baked cousin.
In fact, you could broil/bake some marshmallows on top (use an oven safe dish) while your meat is “setting/cooling” for a more traditional vibe.
Or get REAL crazy and serve this because on a Tuesday night! The sugar content is low with the sweetness coming from the granny smith apples. So it could be like Thanksgiving all.of.the.time.
Slow Cooker Apple Pecan Sweet Potato Casserole Recipe
This Slow Cooker Apple Pecan Sweet Potato Casserole Recipe gets it sweetness from granny smith apples. Perfect for your next family dinner or just because on a Tuesday night.
Recipe Yields: Close to 5 cups of yumminess
Primary Ingredients
4 sweet potatoes, peeled and chopped into 1 inch cubes
3 small granny smith apples, peeled, cored, and chopped into 1 inch pieces
1 cup reduced sodium chicken or vegetable broth
1⁄3 cup brown sugar
1⁄2 cup whole milk
3 TBS butter
1⁄2 tsp kosher salt
1⁄2 tsp cinnamon
1⁄2 cup chopped pecans
Directions
1. In your slow cooker, add sweet potatoes, apples, and broth. Cover and cook on low for 7 hours, or high on 5 hours (potatoes should be very tender).
2. Add brown sugar, milk, butter, salt, and cinnamon to slow cooker; beat on high
speed with an electric mixer to combine.
You can also transfer cooked potatoes, apples, and broth to a stand mixer, then add remaining ingredients and beat that way. Either way will work!
3. Once smooth, transfer potatoes to serving bowl and garnish with pecans.
