For example, this Chickpea Avocado Toast Recipe is perfect for the person who loves the creaminess of blended chickpeas (think hummus) and avocado. Even better, it only uses only FIVE ingredients (that we can all pronounce) and while it is flavorful, it isn’t overwhelming.
So it’s perfect on your morning or afternoon toast or on pita chips as an afternoon snack.
Chickpea Avocado Toast Recipe
This Chickpea Avocado Toast Recipe is the combination of the creaminess of blended chickpeas (think hummus) and avocado. Even better, it only uses only FIVE ingredients (that we can all pronounce) and while it is flavorful, it isn’t overwhelming. And it’s SUPER healthy.
Recipe Yields: 3 Servings
Ingredients
1 can Garbanzo Beans/Chick Peas
1 lemon, juiced (about 1/4 cup)
1/4 cup chopped cilantro
1 tablespoon of Olive Oil
1 Avocado
Directions
1. Throw all ingredients into a blender and rough-blend together.
2. Alternatively, you could also use a fork and smash the ingredients together.
3. Enjoy with piled high on a piece of toast or as a dip with vegetables and crackers.
In order to store it, place in a air tight container WITH the pit of the avocado. Should stay fresh for up to 24 hours.
