As meat has gotten more and more expensive, we’ve started eating more and more vegetarian meals.
This Cast-Iron Veggie Pizza recipe satisfies several of my cravings – pizza, savory veggies, and cheese.
(You don’t need to have a cast-iron pan to complete this recipe. However, after cooking with them over the last few months, I’m wondering why it took me so long to convert. Even heat. Easy clean up. Arm workout. My favorite is this Lodge 12-Inch Pre-Seasoned Skillet.)
Cast-Iron Veggie Pizza
Ingredients
1.5 cups of white or whole wheat flour
1 teaspoon rapid-rise yeast
1/2 teaspoon salt
1 teaspoon honey
3/4 cup warm water (110 to 115 degrees)
2 tablespoons olive oil
3.5 cups of broccoli, chopped (but you want some bigger pieces)
1/2 cup onion, chopped
1 red bell pepper, chopped
2 garlic cloves, minced
1/3 cup feta cheese, crumbled
1/2 cup Asiago or Parmesan Cheese, freshly grated
Directions
1. Preheat oven to 425 degrees.
2. Combine first three ingredients in a large bowl. Stir in honey, water, and 1 tablespoon olive oil.
3. Mix ingredients (adding extra flour if needed) until a soft, slightly sticky dough forms.
4. Placed dough in large well-greased bowl, cover with plastic wrap, and set aside in a warm place until it is doubled in volume. (Approximately one hour.)
5. Toss together broccoli, onion, red pepper, garlic, and 1 tablespoon olive oil in a large bowl. Place in a roasting pan and bake uncovered for 20 minutes or until a little golden brown.
6. Lightly grease 12-inch cast iron pan with vegetable oil and set aside.
7. Punch down dough and turn out onto a lightly floured surface. Shape dough into a large round and place in to greased skillet.
8. Press dough into bottom of skillet and work around and up the side about one inch. (You can also use a small dough-roller.)
9. Top with roasted veggies and cheese.
10. Bake until crust is crisp, cheese is slightly brown, and the house smells awesome. Around 30 – 40 minutes.
11. Take pizza out. Use metal spatula to place pizza on cutting board. Slice and eat.
