I love this time of year. When all of the summer fruits start becoming ripe and are just juicy and sweet. This week’s What For Dinner? Recipe is a little on the gourmet side, but with all of the pork and produce on sale this week, you should still be able to come in at under $10. And you get to grill fruit – what could be better?
Vanilla Peach Pork Chops with Green Onion Slaw
Pork Chops & Brine
4 pork loin chops, about 3/4 to 1 inch thick (check out the Hy-Vee or Hen House Deals)
1 cup water
1 T Kosher Salt
1 T sugar
1 T pure vanilla
Green Onion Slaw
2 cups shredded red cabbage (cause it is a super food)
1 cup thin-sliced strips of green onion
1/2 cup golden raisins
1/3 cup fresh cilantro
1 jalapeno pepper, finally chopped
1/4 cup lime juice
3 T olive oil
2 T honey
Peach Prep
2 T packed brown sugar
2 large peaches, halved and pitted (check out the Hy-Vee, Price Chopper or Hen House Deals)
1 T olive oil
Pork Chop Glaze
2 T peach or apricot preserves
1 T mustard
1/2 tsp pure vanilla
