The purpose of What’s For Dinner? is to provide you a recipe with items on sale this week, with no more than 10 ingredients, and coming in at under $10 per meal.
Whenever I have fresh basil in the house their are two things I like to do with it – put it on pizza or put it on pasta. Since Hubs is super-secret with all his pizza recipes, we’ll have to settle on a pasta recipe this week. I know this recipe looks simple, but it can be because all of the ingredients are high quality. And to be honest, I prefer a simple pasta in the summer over a heavy red sauce. Remember, sometimes simple dishes can be extra-ordinary when you use better ingredients.
Kelly’s Simple Pasta Toss
Ingredients
Ronzoni Pasta and Cal-Ann Basil from Hen House
Frozen Chicken Breasts from Hy-Vee
2 cloves Garlic
1/2 cup Onion
1/2 cup White Wine
2 T Olive Oil
2 cans Red Gold Tomatoes (I used the ones with basil, oregano, and parsley)
1 cup Fresh Parmesan Cheese
Directions
Grill Chicken on hot coals or propane grill – season with Lawry’s Season Salt. Cut into strips or bite-sized chunks and set aside.
Heat olive oil in pan on med-high heat. Add onion and for 3 minutes. Add garlic and cook till onion and garlic are soft. Add white wine, Red Gold Tomatoes and 1 cup fresh basil chopped. Turn heat down to med and simmer until items get a little saucy. Around 15 minutes.
Make noodles according to package directions.
Drain noodles and put noodles and sauce in a big pasta bowl and toss.
Assemble by placing portion of pasta, topped with grilled chicken and a HEALTHY dose of fresh parmesan cheese. Sit outside with a glass of wine and enjoy the beginning of summer.
