These burgers rock!
How rockin’ are they?
Well, you know how Hubs is a lover of all things cow, pig, or chicken?
He asks for this recipe once a month and will eat leftovers.
Go ahead, take a minute to be shocked and awed. I know, I was too.
Even better – it is easy on your budget because they are is vegetarian.
Greek Spinach Veggie Burgers
1/4 cup olive oil
1 clove of garlic, minced
1 teaspoon oregano
1 teaspoon dill weed
1/4 tsp black pepper
1/2 bag of Stove Top Stuffing (part of the Price Chopper Deals)
2 eggs, slightly beaten
1 10 oz package, frozen chopped spinach, thawed and well drained
1 cup of feta cheese
4 whole wheat hamburger buns (don’t use white – not as good)
Yogurt sauce – see recipe below
Directions
1. In a medium bowl, combine oil, garlic, oregano, dillweed, and black pepper.
2. Stir in stuffing mix and coat well.
3. Stir in eggs, spinach and feta and mix well.
4. Shape into four 1/2 thick patties.
5. Spray griddle or electric skillet with Pam or Spray Oil and then heat to medium heat.
6. Place patties on hot griddle and heat for 3 minutes per side or until golden brown.
7. Serve with buns and yogurt sauce.
Yogurt Sauce
Ingredients
1 cup plain yogurt
1 clove garlic, minced
1 teaspoon olive oil
1/4 cup chopped walnuts (optional)
Directions
1. Place all ingredients in a small bowl. Whisk together. Cover and place in fridge for at least three hours.
