Ah, the nice weather has made our grill work over time over the last couple of weeks. Since whole chicken fryers on sale at Hen House and cheap KC Masterpiece BBQ Sauce from Hy-Vee this week – it seemed the perfect time to share my favorite BBQ Chicken Marinade. Serve the chicken with a simple summer salad and then leave room for some yummy strawberry pie with the strawberries from Aldi.
Barbara’s BBQ Chicken
1 cup cooking oil
1 tsp. ground black pepper
1 pt. cider vinegar
1 T. poultry seasoning
2 T. Lawry’s Season Salt
Chicken pieces cut up as desired
Place cut up chicken in appropriate size zip-loc baggie.
Beat the egg, then add oil and beat again. Add pepper, vinegar, salt, and poultry seasoning. Stir. Pour marinade over chicken and seal bag. Leave in refrigerator, turning occasionally for 6-8 hours. Remove chicken from marinade and discard marinade. Grill chicken over hot fire basting with favorite BBQ sauce until done. It will the most tender and flavorful BBQ chicken you will ever have. Enjoy.
