Thirsty Thursday: 2008 Casillero del Diablo Cabernet Sauvignon

Sometimes you need to drink a Cabernet Sauvignon.

Usually, that occasion is when you eat a big piece of cow.

Sometimes, it’s because you have a hard day and a stiff gin and tonic isn’t available.

Enter the 2008 Concha y Toro Casillero del Diablo Cabernet Sauvignon from Chile.

This is grown up wine…make no doubt about it. From the first crimson/blood red pour to the tannin structure in your mouth to the 13.5% alcohol level – this is a big Cab that isn’t close to being called “fruity”.

The nose is a combination of cherry, cassias, rich black fruits (blackberries).

Upon the first drink, you will notice a smidge of bitterness from the tannins. And while not overbearing, it does require a second drink to get your mouth “right” for the wine at hand. Upon the second drink, you will notice undertones of more cherry, spice, and unsweetened mocha chocolate.

The Casillero del Diablo Cabernet Sauvignon is a full-bodied wine that would be best paired with food – steak, heavy cheese, or a cream sauce.

Or, you can “take it like a man” and drink it without food when you are looking for a “stiff” glass of wine after a rather long day.
