As you all know (or maybe not), I grew up in Nebraska.
And Hubs is also from Nebraska. And his family owns a ranch. And they have lots of cows.
And beef is really important to them.
And, even though they are family, and I love supporting them, eating beef has always been really important to me.
I love a well-cooked steak. LOVE IT.
If given the choice of any meal I could have, it will always be a good steak, good veggies (like fresh asparagus, broccoli, or green beans), french bread, and a twice-backed potato.

The Kansas Beef Council has a ton of resources on their website. For example, I love this eCookbook that contains a TON of Lean Beef Flavor Boosters. (Which is code for rubs, marinades, and cooking techniques. I’m ALWAYS on the lookout for a new marinades and rubs.)
And my new favorite recipe from the Beef Council (it was a 2009 Beef Cook-off Winner) is… Pomegranate Steak with Quinoa. (Steak & Quinoa…my two favorite things!)
