Some of you may have wondered why I was so quiet yesterday.
I saw many other posts, tweets, facebook updates about Father’s Day (and each was special and fun in it’s own way).
But at our house Father’s Day consists of letting the recipient have a “day” all to himself.
So while, Hubs was off building a pizza oven in the backyard. (Yes, this is what he chose to do. Don’t ask me why? Men can be strange.) The kids and I went to the pool and a little shopping trip for these….
Here’s the deal. I was making Hubs my famous London Broil recipe last night, along with some marinated yellow squash, and smushed yukon gold potatoes.
I could have made a homemade dessert too. However a good apple cake or chocolate decadence would not have received the same response as Nestle Drumsticks from my Hubs.
Pure. Happy. Giggly. LOVE.
So I bought the value sized box for $4.97 at Walmart. (You know the one with Vanilla, Chocolate, and Caramel.)
And after he stuffed himself silly with dinner, he stuffed himself silly with Nestle Drumsticks. (And the kids and I had one too….)
And now they are gone.
And he declared – “This was the best Father’s Day Meal EVER.”
Kelly’s Infamous London Broil
Ingredients
2 medium shallots, sliced thinly
1 tablespoon dried thyme leaves
3 tablespoons brown sugar
1/4 cup soy sauce
3 tablespoons Worcestershire Sauce
2 tablespoons balsamic vinegar
1/4 cup vegetable oil
1.5 – 2 lbs London Broil
1/4 cup water
2 tablespoons butter
Directions
1. Combine the first seven ingredients in a small bowl and mix together. Place meat in a freezer ziploc bag and pour mixture over meat. Seal and refrigerate for at least 24 hours.
2. Preheat grill to medium heat.
3. Take steaks out of marinade and place in a shallow pan. Pour marinade in to a small saucepan with 1/4 cup of water and bring to a boil. Boil for 5-7 minutes. Add butter and boil for another 3-4 minutes or until the sauce starts to thicken. Turn down to low.
4. Grill steaks on medium heat until they are medium rare. Take off grill and let them stand for 10 minutes (VERY IMPORTANT). Slice very thin across the grain. Place in a shallow pan and pour marinade/butter mixture over and serve immediately.
