A Chewy Gingersnap Cookie Recipe is a bit of a oxymoron.
Chewy? Snappy? Cookie?
And you are wondering…did you go to college?
Do you ever have “that cookie” that you make and all 30 cookies are gone within a 24-hour time period?
Peeps, meet the Chewy Gingersnap Cookie.
I’ve always been a fan of gingersnaps. I love the mix of ginger, cinnamon, sugar, and SOMETHING that makes them irresistible with tea or a hot cup of coffee. But I was greedy. So I wanted all of the taste profiles of a gingersnap cookie, but I wanted it to be chewy. And eventually, after a few tries, I found it.
So it is a confused cookie, aren’t we all? But, oh, my friends…it is absolutely the best chewy gingersnap cookie that ever existed.
Note: My son. Who is 11, can rock this cookie like no ones business. Yes, if my cooking-challenged pre-teen can make it, I guarantee you can rock it too.
Chewy Gingersnap Cookie Recipe
I get it. A Chewy Gingersnap Cookie Recipe is a bit of a oxymoron. But if you love the mix of ginger, cinnamon, and sugar of a gingersnap, but just wish it was chewy…this is your cookie.
Recipe Yields: 24 cookies
Ingredients
3/4 cup shortening
1 cup granulated sugar
1/4 cup granulated sugar in small bowl, set aside
1/4 cup molasses
1 egg
2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
Directions
1. Preheat oven to 350 degrees.
2. Mix flour, ginger, cinnamon, soda and salt together in a medium bowl. Set aside.
3. Cream shortening and 1 cup of sugar in a medium bowl with a mixer on medium-high speed. Add egg and beat until fluffy. Stir in molasses and mix well. Turn mixer to low and add flour mixture.
4. Using a cookie scoop drop teaspoon of dough into your hand, roll into a ball, and dip it bowl of reserved sugar and place on to Nordic Ware Baking Sheets lined with Silicone Baking Mats. Each cookie sheet should have approximately 12 cookies.
A cookie scoop, Nordic Ware Baking Sheets (or other commercial baking sheets) and silicone baking mats, is the secret to making perfectly uniform cookies every time. Same size, same browning, same taste. They are an investment, but worth every penny.
5. Bake for exactly eight minutes. Let rest for three minutes and then transfer to a baking rack to cool.
